Abstract

La invencion se relaciona con un método para la pasteurizacion y fermentacion en la produccion de una bebida alcoholica. El método involucra tomar un extracto fermentable soluble de una mezcla cervecera (amasado de cebada con agua hirviendo) procesada, mezclarlo en una zona de mezclado con un extracto fermentable fermentado que contiene un contenido de alcohol de cuando menos el 4% de alcohol por volumen junto con otros productos que se forman durante la fermentacion procesar ésta mezcla mediante el calentamiento de la mezcla hasta una temperatura no mayor de 60 degree C (140 degree F), mantener la mezcla a esa temperatura durante 10 a 20 minutos y luego enfriar la mezcla a una temperatura de fermentacion, antes de fermentar la mezcla segun procesos de fermentacion conocidos. Para poder producir un proceso de flujo de operacion continuo y controlar mejor la gravedad específica del extracto fermentable no fermentado, el extracto líquido de la mezcla cervecera puede convertirse a un producto en polvo soluble, el cual entonces se puede alimentar en un flujo continuo de producto en polvo para disolverlo con un flujo continuo de agua, para producir un flujo continuo de extracto soluble fermentable para ser mezclado con un flujo continuo de extracto fermentable fermentado que sale de una salida de una planta de fermentacion continua, procesándose la mezcla segun especificado en lo anterior antes de entrar a la planta de fermentacion continua para la fermentacion para producir una bebida alcoholica.
