Abstract
929,315. Continuous production of beer &c. A.P.V. CO. Ltd. Nov. 15, 1961 [Nov. 28, 1960], No. 40871/60. Class 14 (2). In the production of potable alcoholic liquids such as beer by continuous fermentation, the concentration of the sugar in the fermenting liquid declines progressively and continuously along a fermenting zone from the point of introduction of the unfermented feed liquid to the point of removal of the fermented product. Hopped wort entering through an inlet 2 is distributed over the cross-section of a fermentation vessel 1 having a high slenderness ratio, e.g. 20 to 1, to which air or oxygen is supplied through a sparging ring 4. The yeast cell concentration achieved in the fermentation, amounting to from 20 to 60% settled yeast by volume, causes a yeast plug to be formed along and across the vessel as a continuous phase or lattice of yeast through which fermenting liquid and gas pass to a yeast separator 6; back flow is inhibited by successive spaced transverse baffles 5. Temperature attemperation jackets 8, 9 may be provided.
