Abstract
In the production of a distilled spirit including the steps of producing a mash by mixing water, malt and cooked grain under conditions suitable for the breakdown of starch in the grain to a water-soluble product, fermenting the aqueous solution present in the mash after addition of a suitable yeast and distilling the dilute alcoholic solution so obtained, water-insoluble solids are removed by passing the mash through a hydrocyclone either before or after fermentation. There may be employed a series of hydrocyclones connected so that there is countercurrent flow of solids to be removed and liquid to be fermented or distilled through all the hydrocyclones.
