Abstract
A mixture of anthocyanidin glycosides is obtained from a source material consisting of mulberries or blackcurrants or a juice or extract thereof by subjecting the source material to a fermentation with a yeast which preferably has previously been lyophilized and acclimatized to the substance found in the source material and separating the mixture of anthocyanidin glycosides from the fermented mixture by evaporation, optionally followed by extraction of soluble impurities in cold ethyl alcohol, optionally followed by a further purification step to dissolve the glycosides in water and eliminate insoluble impurities.
