Abstract
El solicitante ha encontrado sorpresivamente una composicion para descontaminar los productos alimenticios de origen vegetal o animal, adecuada para retirar de sus superficies a los gérmenes y cargas de sustancias no sanitarias, sin alterar y hacer nociva a la textura del producto alimenticio. Dicha composicion comprende sulfato de sodio, un agente suspensor, carboximetilcelulosa, propilenglicol, por lo menos un agente de lixiviacion, por lo menos un agente de secuestro, por lo menos un agente amortiguador, y por lo menos un agente emulsificante. Otro objetivo de la presente invencion es proporcionar un método para descontaminar las superficies de los productos alimenticios de origen animal y vegetal, que comprende los pasos de someter el producto alimenticio a un lavado por una solucion acuosa que contiene de 0.05-1-5% de dicha composicion, a una temperatura de 15 degree C a 65 degree C, por un lapso de tiempo desde 60 segundos a 6 minutos, dependiendo del animal y la especie vegetal a ser procesados, y el llevar a cabo sucesivamente un paso de enjuague por agua. Puesto que la carne de puerco y de las aves tiene que ser procesada específicamente, dicho método comprende los pasos de someter al animal sacrificado a un baño de una solucion acuosa que contiene de 0.1% a 0.3% de dicha composicion durante el paso de lavado en el baño de escaldado y/o someterlo a una ducha por una solucion acuosa que contiene de 0.05% a 0.2% de la composicion dicha, durante los pasos subsecuentes de desplumado, retiro de pelo y retiro de visceras, y un paso subsecuente de enjuague tanto en agua pura o de mar para retirar las sustancias contaminantes hidrosolubilizadas. Puesto que los productos vegetales tienen que ser descontaminados, el método comprende usar la composicion ya mencionada en operaciones manuales y mecánicas de lavado de frutos y vegetales proporcionados para la transformacion y preservacion de los mismos.
