Abstract

Las emulsiones con bajo contenido en grasa, con fase continua grasosa pueden ser preparadas mediante un proceso, que comprende: (I) a formacion de una emulsion continua de agua, que tiene 10.30% en peso de grasa, 5-57% en peso de agua y 13-85% en peso de un remanente, que contiene principalmente un espesante, un endulzante y/o un humectante, a una temperatura por arriba de la temperatura de fusion de la grasa; (2) el enfriamiento de la emulsion bajo un corte de 30-1500 S-1, aplicando un tiempo de residencia de 2 minutos, durante cuyo enfriamiento ocurre la inversion de fase.
