Abstract
Un procedimiento para formar una pulpa aséptica, sensible a los cítricos, implica pasos de: a) extraer y terminar pulpa sensible que contiene jugo cítrico para producir una suspensión de pulpa/jugo cítrico que contiene 30 a 50 de pulpa y 50 a 70 de jugo; b) esterilizar la suspensión de pulpa/jugo calentándola a una temperatura de más de 88ºC, durante al menos 30 segundos; c) terminar adicionalmente la suspensión de pulpa/jugo en un terminador que mantiene condiciones asépticas para producir el producto aséptico de pulpa que contiene de 80 a 100 de pulpa y hasta 20 de jugo; y d) empacar el producto de pulpa bajo condiciones asépticas. Un producto de pulpa cítrica, sensible, aséptico, comprende 80 a 100 de pulpa sensible cítrica y hasta 20 de jugo cítrico, en donde la pulpa sensible es aséptica, tiene una actividades matilesterasa de pectina no superior a 1.0 U. P. E.; y tiene un tamaño promedio de 10 a 25 mayor que la pulpa convencional; y en donde por lo menos el 90 de la pulpa sensible consiste de sacos de jugo rotos. Un jugo cítrico comprende de 93 a 97.5 de jugo cítrico, con una viscosidad no mayor que 5.5 centipolse y 2.5 a 7 de la pulpa sensible, aséptica. La menor viscosidad del jugo es el resultado de niveles menores de pulpa que sedimenta y/o un procedimiento de elevado esfuerzo cortante.
