Abstract

La presente invención se refiere a una emulsión aceite en agua, caracterizada porque comprende una fase acuosa continua y una fase oleosa dispersa, la emulsión consistente de: 20-45% en peso de agua; 4-40% en peso de aceite; 3-12% en peso de ciclodextrina seleccionado de alfa-ciclodextrina, beta-ciclodextrina y combinaciones de las mismas; 20-60% en peso de sacáridos seleccionados entre monosacáridos, disacáridos, oligosacáridos no cíclicos, alcoholes de azúcar y combinaciones de los mismos; 0-30% en peso de otros ingredientes comestibles; en donde la emulsión contiene al menos 80% de los sacáridos en peso de agua.
