Abstract
La presente invención se refiere a una composición en forma de una emulsión aceite en agua -preferentemente, una emulsión del tipo mayonesa- que contiene semilla de mostaza blanca o amarilla molida y yema de huevo modificada por enzima. De esta manera, es posible reducir la cantidad de aceite en la emulsión y, al mismo tiempo, mantener la estructura de una mayonesa totalmente grasa, sin usar grandes cantidades de agentes espesantes o agentes estructurantes para fase acuosa. Asimismo, la invención se refiere al uso de semilla de mostaza blanca o amarilla molida como un ingrediente de la emulsión para reducir la concentración de aceite en la emulsión.
