Abstract

La presente invención se refiere a el ácido sórbico se utiliza ampliamente como un conservador en alimentos y bebidas. Un problema común cuando se utiliza ácido sórbico en aplicaciones de bebida es la baja solubilidad en jarabes y bebidas terminadas. Debido a su baja solubilidad, el ácido sórbico es inestable en jarabes y bebidas terminadas dando por resultado cremosidad y precipitados. Por ejemplo, la solubilidad del ácido sórbico en agua a temperatura ambiente es 0.16% en peso. Se desea tener por lo menos 1200-1600 ppm de ácido sórbico en jarabes y por lo menos 200-250 ppm en bebidas terminadas, pero tales cantidades han sido difíciles de lograr debido a la baja solubilidad, cremosidad, asentamiento, precipitación y separación de fases.
