Abstract
La presente invención se refiere a un proceso para producción de una composición de aceite bajo en ácidos grasos saturados que comprende a) mezclar una fuente de triacilglicerol que comprende i) un aceite de algas, aceite vegetal o un aceite animal, o ii) aceite de soya con una solución acuosa de una enzima saturasa de 15 a 50°C en presencia de un emulsionante durante 24 a 72 horas para obtener una emulsión, en donde el triacilglicerol comprende por lo menos un residuo de ácido graso saturado y por lo menos un residuo de ácido graso insturado, y el emulsionante comprende una sal alcalina de un ácido graso insaturado, y la enzima saturasa es de 10 a 20,000 unidades por kg del aceite, b) mezclar un ácido acuoso con la emulsión para obtener una mezcla, en donde el ácido está en una cantidad suficiente para ajustar el pH a menos de 4, y c) separar la mezcla para obtener una fase oleosa y una acuosa, en donde el aceite comprende la composición de aceite bajo en ácidos grasos saturados.
