Abstract

La presente invención se refiere a un recubrimiento continuo en grasa el cual es adecuado para recubrir barras de nutrición y otros productos, especialmente productos alimenticios los cuales incluyen menos grasa saturada. El recubrimiento incluye una base de lípido que tiene un estructurante de fitoesterol y/o fitoestanol y hasta 28% en peso o menos de porciones de ácido graso saturado. El fitoesterol o fitoestanol sirve para proporcionar estructura suficiente al recubrimiento para eliminar la necesidad de concentraciones mayores de grasas saturadas ingredientes los cuales están contenidos habitualmente. El recubrimiento ventajosamente incluye numerosos ingredientes adicionales que típicamente se encuentran en recubrimientos tales como cacao, polvo de fresa, polvo de yogur, etc. La base de lípido típicamente comprenderá de 20-50% en peso de recubrimiento, especialmente de 25-40% en peso.
