Abstract
La presente invención se refiere a una cápsula coacervada caracterizada porque comprende: (a) de 10 a 99% en peso de la cápsula de un núcleo que comprende una mezcla de (I) un componente graso que comprende (i) aceite hidrogenado o (ii) grasa hidrogenada o (iii) manteca de cacao o (iv) una mezcla de los mismos, y (II) un material a ser encapsulado que comprende un material de sabor y/o fragancia, la mezcla tiene un Tm de entre 30°C y 40°C tal que es sólida a 20°C, en donde la relación de peso del componente graso al material a ser encapsulado es desde 30:70 a 50:50 y (b) de 90 a 1% en peso de la cápsula de una capa recubierta consiste de una proteína o de una proteína y un polímero sin proteína, la capa recubierta es reticulada mediante un agente de reticulación seleccionado de formaldehído, acetaldehído, glutarldehído, glioxal, alumbre de cromo, y transglutaminsa. Un proceso para la preparación de cápsulas coacervadas estables caracterizado porque comprende los pasos de: (a) preparar una mezcla de núcleo que comprende: (I) un componente graso que comprende (i) aceite hidrogenado o (ii) grasa hidrogenada o (iii) manteca de cacao o (iv) una mezcla de los mismos, y (II) un material a ser encapsulado que comprende un material de sabor y/o fragancia en donde la relación de peso del componente graso a material a ser encapsulado es 30:70 a 50:50, el núcleo tiene un Tm de 30°C y 40°C tal que es un sólido a temperatura ambiente; (b) proporcionar una solución acuosa de una proteína o de una proteína y un polímero sin proteína; (c) mezclar la mezcla de núcleo y la solución acuosa para formar una emulsión o suspensión; (d) inducir separación de fase tal que la proteína o la proteína y el polímero sin proteína formen una pared alrededor de la mezcla de núcleo, y ( e) reticular la pared.
