Abstract
La presente invención se refiere a una composición alimenticia comprendiendo una hidrofobina, una proteína y/o polisacárido y una enzima desnaturalizante correspondiente, en donde la actividad de la enzima desnaturalizante ha sido substancialmente reducida. Una composición de hidrofobina que tiene una actividad enzimática seleccionada del grupo que consiste de: una actividad de mananasa detectable de menos de 0.015 MMU, de preferencia menos de 0.01 MMU, una actividad de endogluconasa detectable de menos de 0.1 EGU, de preferencia menos de 0.05 EGU, una actividad de proteasa de cisteína detectable de menos de 1.3 PU, de preferencia menos de 1, más preferiblemente menos de 0.5 PU, o cualquier combinación de las mismas.
