Abstract

La presente invención se refiere a un método para procesar un almidón caracterizado porque comprende sacarificar un sustrato de almidón a glucosa en presencia de una glucoamilasa sin un ajuste de pH, en donde la sacarificación se lleva a cabo a pH 5.2 a 5.6 y a una temperatura en el intervalo de aproximadamente 58° C a aproximadamente 62°C, en donde además la glucoamilasa se selecciona del grupo que consiste en una glocoamilasa parental de Humicola grisea (HgGA) que comprende la sec. Con núm. de ident.: 3 y una variante de esta, en donde la variante tiene al menos 99% de identidad con la glucoamilasa parental.
