Abstract

La invención se relaciona con un proceso para preparar una proteína vegetal que contiene líquido de una planta oleaginosa desgrasada, que comprende las siguientes etapas: a) Formar una suspensión de la planta oleaginosa desgrasada en un solvente acuoso; b) Tratar enzimáticamente la suspensión obtenida en la etapa a), con las siguientes enzimas:- al menos una proteína glutaminasa para la solubilización en dicho solvente acuoso de proteínas contenidas en la planta oleaginosa desgrasada, - al menos una transglutaminasa, dichas enzimas se usan sucesiva o simultáneamente; c) Recuperar la proteína vegetal que contiene líquido obtenida en la etapa b). La invención también se relaciona con una proteína vegetal que contiene líquido, obtenida de acuerdo con dicho proceso y un producto alimenticio rico en proteínas, que comprende la proteína vegetal que contiene líquido obtenida de acuerdo con el proceso anterior.
