Abstract

The present invention provides an yeast extract product which contains much higher 5'-ribonuclcotides and amino acids than the known products. Also provided is a preparation method for the yeast extract product. The edible yeast is treated with an acid solution, followed by centrifugation to obtain the precipitate. The obtained precipitate is then washed, and subjected to the contact with the enzymes produced by Streptomyces to produce an yeast extract with high content of 5'-ribonucleotides. The yeast extract of the present invention contains more than 24 wt% of 5-inosine and 5'-guanosine, more than 20 wt% of peptides, and more than 28% of peptides and free amino acids.
