Abstract

La invención está principalmente en el campo de la producción de alimentos y alimentos de lujo, por ejemplo especialmente el café y productos sustitutos del café. Se proveen enzimas nuevas que son capaces de degradar la acrilamida, preferentemente a temperaturas superiores a 50 ºC, en particular en los rangos de temperatura que ocurren en la producción de café/productos sustitutos del café, y/o a un valor de pH entre pH 4 y pH 7, como es común en la producción de café/productos sustitutos del café. Además, se proveen métodos para degradar acrilamida de preparaciones seleccionadas de productos semiacabados y productos acabados. También, la presente invención se refiere a preparaciones que tienen un contenido de acrilamida reducido en comparación con las preparaciones que no se han sometido al método para eliminar la acrilamida según la invención por medio de las enzimas según la invención.
