Abstract

La presente invención se relaciona con un proceso para la producción de un análogo de carne, que comprende los pasos de: a) introducir un rebozado de carne que comprende proteína en una unidad de calentamiento y calentar el rebozado de carne a una temperatura por encima del punto de fusión de la proteína para producir un producto tratado térmicamente, en el que la unidad de calentamiento opcionalmente calienta el rebozado de carne mediante calentamiento óhmico; b) enfriar el producto tratado térmicamente moviéndolo a través de una unidad de enfriamiento, de modo que el producto tratado térmicamente tenga una temperatura por debajo de la temperatura de ebullición del agua a presión ambiente al salir de la unidad de enfriamiento, y c) dividir el producto tratado térmicamente enfriado en pedazos, y opcionalmente d) desgarrar las piezas pasando las piezas a través de un contacto de rodillo (14) entre un par de rodillos cilíndricos que giran en sentido contrario (2, 4) que tienen ejes de rotación paralelos (10, 12), una pluralidad de proyecciones (16) están dispuestas sobre una superficie exterior de al menos uno de los rodillos (2, 4).
