Abstract
La presente invención se refiere a un método para producir péptidos de colágeno a partir de huesos, que comprende las siguientes etapas: a) proporcionar huesos de vertebrados; b) triturar mecánicamente los huesos para dar un tamaño de partícula de menos de 1000 µm, preferiblemente menos de 500 pm, más preferiblemente menos de 300 µm, a una temperatura de menos de 70°C durante la trituración; c) calentar los huesos triturados en una suspensión acuosa hasta una temperatura de más de 100°C, preferiblemente más de 120°C, más preferiblemente más de 130°C, durante un periodo de desde 1 hasta 30 min, preferiblemente de 2 a 10 min, más preferiblemente de 4 a 8 min; d) añadir una o más proteasas a la suspensión con el fin de obtener una disolución acuosa de péptidos de colágeno; y e) separar la disolución acuosa de péptidos de colágeno de los huesos triturados, en el que el método no comprende maceración de los huesos con un ácido o calcificación de los huesos con una base, y en el que los huesos proporcionados en la etapa a) no se han sometido a maceración o calcificación. La invención se refiere además a péptidos de colágeno producidos mediante este método.
