La presente invención se relaciona con el uso de compuestos de acuerdo con la fórmula (I) y con X, Y = -NH- o -O-, en donde por lo menos X o Y es -NH-, en la forma de cualquiera de sus estereoisómeros o una mezcla de los mismos, en donde (ver Símbolo) indica un enlace carbono-carbono simple o doble, y en donde un enlace doble carbono-carbono está presente en C2 o C3, el enlace ondulado está indicando una configuración no especificada del enlace doble adyacente, como saborizante de umami.
