Se provee un nuevo glucósido de esteviol que comprende xilosa y la presente invención provee un compuesto representado por la Fórmula (1), o una sal o un hidrato del mismo (ver Fórmula) en donde, (i) R1 representa Xyl(1-2)Glc1-, en tanto R2 representa Glc(1-2)[Glc(1-3)]Glc1- o (ii) R1 representa Glc(1-2)[Glc(1-3)]Glc 1-, en tanto R2 representa Xyl(1-2)[Glc(1-3)]Glc1-, donde Glc representa glucosa y Xyl representa xilosa.
