Abstract

Método ultrasónico de extracción de almidones de frutos de Annonaceae, que comprende: seleccionar frutos frescos en madurez fisiológica; eliminar las impurezas de los frutos; trocear los frutos; mezclar los trozos de frutos con una solución acuosa de ácido ascórbico; moler los trozos mezclados con la solución acuosa de ácido ascóbico, hasta obtener una pasta; aplicar ondas ultrasónicas a la pasta; tamizar la pasta sonificada con enjuagues consecutivos de agua destilada, obteniendo una fase líquida rica en almidones; recuperar la fase líquida de la etapa anterior rica en almidones; dejar reposar la fase líquida rica en almidones, hasta que se precipiten por completo los almidones; recuperar el precipitado rico en almidones; lavar el precipitado rico en almidones con agua destilada; centrifugar el precipitado; recuperar el precipitado rico en almidones; y secar el precipitado rico en almidones de la etapa anterior.
