Abstract

La presente divulgacion se refiere a los almidones cerosos inhibidos y los metodos para usarlos. Un aspecto de la descripcion es un almidon ceroso inhibido a base de maiz, trigo o tapioca que tiene un contenido de amilopectina en el rango de 90-100%; y un volumen de sedimentacion en el rango de 10-50 ml/g; en que la fraccion de amilopectina del almidon ceroso inhibido a base de maiz, trigo o tapioca tiene no mas de 48,5% de ramificaciones de longitud media que tienen una longitud de cadena de 13-24 (medido por un metodo de valle a valle descripto en la presente), y el almidon no esta pregelatinizado; tambien se describen metodos de uso de materiales de almidon en los productos alimenticios.
