Abstract

La invención se refiere a un método de preparación de un producto oleoso comestible, particularmente aceite de oliva virgen extra, que comprende insertar un número predeterminado de aceitunas enteras en un volumen determinado del aceite comestible, las aceitunas enteras tienen un contenido de polifenoles que varía de 1 a 5% de polifenoles en el peso total de las aceitunas, en donde las aceitunas enteras, antes de introducirse en el aceite comestible, se someten a irradiación con radiaciones ionizantes a una dosis absorbida comprendida dentro del intervalo de 2.5 a 15 kGrays.
