Abstract

La presente invención provee granos de trigo de la especie Triticum aestivum y el grano comprende i) mutaciones en cada uno de sus genes de SSIla, de forma que el grano es homocigoto para una mutación en su gen de SSIla-A, homocigoto para una mutación en su gen de SSIla-E3 y homocigoto para una mutación en su gen de SSIla-D, en donde al menos dos de las mutaciones en dichos genes de %lía genes son mutaciones nulas, ii) un contenido de almidón total que comprende un contenido de amilosa y un contenido de amilopectina, iii) un contenido de fructano elevado con respecto al grano de trigo de tipo salvaje con base en peso, preferentemente, entre 3 % y 12 % del peso del grano, iv) un contenido de (3-glucano, v) un contenido de arabinoxilano, vi) un contenido de celulosa. El grano tiene un peso de entre 25 mg y 60 mg, y el contenido de amilosa es entre 45 % y 70 % con base en el peso del contenido de almidón total del grano según se determina mediante ensayo de unión con yodo. El contenido de amilopectina con base en peso se reduce con respecto al grano de trigo de tipo salvaje y cada uno del contenido de 13-glucano, contenido de arabinoxilano y contenido de celulosa aumentan con respecto al grano de trigo de tipo salvaje con base en el peso, de forma tal que la suma del contenido de fructano. el contenido de 3-glucano, el contenido de arabinoxilano y el contenido de celulosa es entre 15 % y 30 % del peso del grano.
