Abstract
En un aspecto, la presente invención se refiere a un embutido de emulsión fina recubierto con alginato en el cual el recubrimiento de alginato exhibe una adhesión mejorada al contenido de embutido después de cocinar. En otro aspecto, la presente invención se refiere a un proceso para la fabricación de tales embutidos. En un aspecto, la presente invención se refiere a una emulsión fina que comprende: (a) un relleno que se produce a partir de una emulsión fina de carne y/o vegetales; y (b) un recubrimiento que comprende un alginato y un compuesto de calcio escasamente soluble; en donde: (i) tal relleno y recubrimiento han sido coextruidos; y (ii) después de recalentar en agua a 90°C durante 5 minutos, al menos el 50% de la tripa para embutidos permanece adherida al relleno.
