Abstract
Se describen métodos para preparar esteviol glicosidos altamente purificados, particularmente Rebaudiosidos A, D y M. Los métodos incluyen la utilización de microorganismos recombinantes para convertir varias composiciones de partida a estivol glicosidos objetivo. Además, se describen estivol glicosidos novedosos Reb D2, Reb M2 y Reb I, así como métodos para preparar los mismos. Los rebaudiosidos altamente purificados son útiles como edulcorantes no calórico en composiciones comestibles y masticables tales como cualquiera de bebidas, confituras, productos de panadería, galletitas y gomas de mascar.
