Abstract
Se proporciona un método para producir un queso natural que cuenta con características mejoradas de derretimiento a partir de una cantidad de leche cruda. El método incluye separar la leche cruda en una porción de crema y en una porción de leche reducida en grasa. Una porción de crema es emulsificada en una máquina con un proceso de homogeneizado que produce glóbulos de grasa de tamaño reducido. Toda la porción de crema y la porción de leche reducida en grasa son combinadas en un fluido de queso y pasteurizadas. Un agente coagulante es añadido al fluido de queso y procesado para producir un queso natural que cuenta con características de derretimiento mejoradas del fluido de queso que incluye la porción de crema emulsificada.
