Abstract

504,092. Cheese. WILSON, H. L., and ROGERS, L. A. Aug. 2, 1938, No. 22824. [Class 84] In making and packing Cheddar cheese, cream is separated from milk and homogenized, e.g. at about 145‹ F. and 200-2500 lb. pressure. and mixed with the skimmed milk to reduce the fat content sufficiently to give the percentage of fat desired in the cheese. The skimmed milk and cream are pasteurized before or after mixing, the mixture being preferably treated in a flash pasteurizer heated to 165‹ F. and then cooled to about 88‹ F. in a surface cooler. The product is made into Cheddar cheese by the usual process and is finally packed in hermetically sealed metal or other containers for ripening and storing, the containers having a venting valve preventing entry of air but allowing escape of the gases forming from the cheese. The cheese may be wrapped in parchment paper, metal foil, &c. before packing in the container.
