Abstract

La primera invención se refiere al uso de un alternano como ingrediente para productos alimentarios ácidos y a un producto alimentario ácido que comprende alternano como ingrediente. La segunda invención se refiere al uso de alternano como ingrediente estable frente al calor en una formulación de producto alimentario, a un producto alimentario que contiene alternano como ingrediente, en el que el producto alimentario se sometió a una etapa de calentamiento durante su fabricación.
