Abstract
La presente invencion generalmente se relaciona con agentes de volumen bajos en calorias (v.gr., celulosa, almidon, salvado, glucanos, hidrocoloides, y similares) recubiertos con un compuesto de lipidos para formar una capa de base o interior y posteriormente encapsular el complejo fibra/lipido dentro de un compuesto de proteina como una capa exterior. En efecto, la presente invencion proporciona un sistema de entrega para fibras comestibles donde la absorcion de humedad por las fibras comestibles se puede controlar. Usando la fibra encapsulada de esta invencion, la absorcion de agua por la fibra comestible (y asi el hinchado de la fibra comestible) puede efectivamente retrasarse hasta que la fibra encapsulada alcanza el estomago y los procesos digestivos normales comienzan.
