Abstract

Se describe una barra salada con buenas propiedades organolepticas. De conformidad con otra modalidad de la invencion, la barra alimenticia salada comprende un aglutinante que incluye no o mas ingredientes fibrosos que tienen menos de 70% de enlaces glucosidicos 1,4, mas de 15% enlaces glucosidicos 1,6, especialmente desde 25% hasta 50%, por lo menos 5% de cada uno los enlaces glucosidicos 1,2 y enlaces glucosidicos 1,3 y el aglutinante incluye no mas de 5% en peso de solidos de mono- y disacaridos. La invencion tambien esta dirigida a un proceso para preparar el aglutinante y las barras alimenticias.
