Abstract

La presente invención se refiere a procedimiento para estelirizar yema de huevo, caracterizado por acidificar una lechada acuosa de yema de huevo, en donde la cantidad de yema de huevo es lechada acuosa es de 5 a 50 porciento por peso en base al peso de la lechada, a un pH de 2.0 a 5.7 y luego calentar la lechada acuosa acidificada a una temperatura de 128 a 155 grados centigrados por un tiempo suficiente para estelirizar la yema de huevo.
