Abstract

La presente invención se refiere a un proceso para la recuperación de una enzima extracelular a partir de cerveza de fermentación entera, que comprende añadir a cerveza de fermentación entera que contiene células de microorganismos y una enzima extracelular, una mezcla de (a) un polímero seleccionado de la clase que consiste en polietilen-glicol, un derivado de amina de polietilen-glicol, un derivado de carboxilato de polietilen-glicol, polipropilen-glicol, un derivado de amina de polipropilen-glicol, un derivado de carboxilato de polipropilen-glicol, éster de poli(etilen-glicol), polietilenimina, trimetilamino-polietilen-glicol, alcohol polivinílico, polivinilpirrolidona y sus mezclas, y b) una sal inorgánica, dejando que la mezcla de cerveza de fermentación entera-polímero-sal se separe e una fase de polímero rica en enzima y una fase de sal pobre en enzima y recuperando un producto rico en enzima a partir de la misma.
