Abstract

Invenţia se referă la industria alimentară, în special la producerea pâinii.Procedeul de producere a pâinii include prepararea plămădelii din făină, apă şi drojdii, fermentarea ei, frământarea aluatului adăugând cantitatea restantă de făină şi apă, precum şi malţ fermentat, concentrat de must de cvas, zahăr, sare, fermentarea ulterioară a aluatului, divizarea lui în semifabricate, dospirea şi coacerea. Noutatea invenţiei constă în aceea că la frământarea aluatului se adaugă mirodenii, 20% din care în amestec cu malţul se mărunţesc prealabil, se înmoaie în apă la temperatura de 45...55°C timp de 45...50 min, iar cantitatea restantă de mirodenii de asemenea se înmoaie prealabil în apă la temperatura de 90...95°C timp de 25...30 min. Fermentarea aluatului se realizează până la aciditatea de 9...11 grade.Rezultatul tehnic al invenţiei constă în îmbogăţirea pâinii cu componente biologic active, ce permit majorarea termenului de păstrare a prospeţimii pâinii.
