Abstract

The invention relates to the dairy industry, namely to two embodiments for producing curds and beverage from sour whey.The process, according to the invention, comprises heating of whey, maintenance, separation of the clarified whey from the protein mass with the production of curds, its self-pressing and introduction into the curds of food additives, wherein the clarified whey is directed to the production of a beverage by adding sugar, a fruit or vegetable additive to the whey, pasteurization and cooling (embodiment 1) or by adding the ferment of bacteria Streptococcus thermophilus to the whey, fermentation, cooling, addition of sugar, of a fruit or vegetable additive, mixing and cooling (embodiment 2).
