Abstract
The invention refers to the dairy industry, namely to a process for whey processing.The process, according to the invention, includes cooling of the initial whey, separation from the caseinic powder, electroactivation in the cathodic cell of a membrane electrolyzer with feeding into the anodic cell of a 1…2% calcium brine and separation of the proteomineral concentrate from the deproteinized whey. The deproteinized whey is cooled and additionally electroactivated in the cathodic cell with an addition of 0.5…1.0% of carbamide, with feeding into the anodic cell of a 0.5…1.0% calcium brine.The result consists in increasing the degree of lactose isomerization into lactulose up to 65%.
