Abstract

Inventia se refera la industria produselor lactate, si anume la un procedeu de procesare a zerului. Procedeul de procesare a zerului include colectarea zerului, racirea pana la temperatura de 5…10°C, electroactivarea zerului in celula catodica a unui electrolizor cu diafragma cu debitarea unei parti a acestuia in celula anodica la o densitate a curentului de 10,0…20,0 mA/cm2, separarea spumei dezerul deproteinizat ce contine lactoza si lactuloza, dupa care din spuma se separa concentratul proteico-mineral, totodata electroactivarea zerului se efectueaza la temperatura de 5…50°C. Rezultatul consta in obtinerea unui produs proteic cu un continut bogat de substante minerale si a unui produs ce contine lactoza si lactuloza.
