Abstract

The invention refers to the wine industry, in particular to a process for natural sparkling wine production. The process, according to the invention, includes blending and treatment of the wine stock, preparation of the reservoir, expeditionary liquors and of the leaven of pure yeast culture, preparation of the fermentative mixture, secondary fermentation in reservoirs, cooling, administration of the expeditionary liquor, filtration and bottling of the sparkling wine. Summary of the invention consists in that for blending there are used new wine stocks and wine stocks matured in oak vessels taken respectively in the ratio of (14...19):(1...6) mass parts, and cooling is carried out at a temperature of 3...4?C with cold-ageing during 48 hours. The result consists in obtaining a natural sparkling wine with properties characteristic of the classical collection sparkling wine.
