酪酸エチル含有量を一定にしたサンプル1〜7の飲料は、4−ビニルグアイアコール含有量が0.5〜20ppmのとき、刺激香が抑えられ、かつ熟したバナナ香を感じられるものであった(表1)。4−ビニルグアイアコール含有量を一定にしたサンプル8〜14の飲料は、酪酸エチル含有量が0.1ppmを超え1ppm以下のとき、刺激香が抑えられ、かつ熟したバナナ香を感じられるものであった(表2)。また、酪酸エチル単独では、爽やか、フローラル(ゆり、ヒヤシンス的な香り)といった香りが感じられた。酪酸エチルと4−ビニルグアイアコールを特定の含有量で組合わせることにより、意外にも熟したバナナ様の香り(熟したバナナ香)が感じられた。 The beverages of Samples 1 to 7 having a constant ethyl butyrate content had a suppressed pungent aroma and a ripe banana aroma when the 4-vinylguaiacol content was 0.5 to 20 ppm (). 原料(水、ホップを除く)に大麦麦芽及び小麦麦芽を使用し、常法に従い麦汁を得た。得られた麦汁に4−ビニルグアイアコール及び酪酸エチル生産能が高い上面発酵酵母を添加して発酵を行い、実施例1のビールテイスト飲料(アルコール度数:5.5%)を得た。

市販されているビール(市販品D)に対し、4−ビニルグアイアコール(和光純薬工業社製)及び酪酸エチル(東京化成工業社製)を添加し、実施例2のビールテイスト飲料(アルコール度数:5%)を得た。実施例2のビールテイスト飲料、及び市販品Dは、乳酸添加によるpH調整により、共にpH4.4とした。実施例2のビールテイスト飲料、及び市販品Dの4−ビニルグアイアコール及び酪酸エチルの含有量は、試験例2と同様にして測定した。測定結果は表4に示した。
