Abstract

Invenţia se referă la industria alimentară, în particular la procedeele de obţinere a produselor conservate din fructe şi legume.Procedeul de obţinere a prunelor marinate include următoarele operaţii: fructele se sortează, se înlătură pedunculii, pentru preîntâmpinarea plesnirii prunele să usucă până la umiditatea de 25…45%, se scot sâmburii, se umplu cu miez de nucă sau cu felii de usturoi, se adaugă marinata. Marinata conţine mirodenii; acid acetic sau soluţie de acid acetic, sau oţet de vin, sau oţet de mere; acid lactic; iar în calitate de adaosuri de gust se introduc separat sau în amestec sucuri de fructe, vin de struguri sau vin de fructe şi pomuşoare, sirop de fructe, zahăr sau miere.Rezultatul constă în sporirea valorii biologice şi a calităţilor gustative ale produselor conservate.
