Abstract
Изобретение относится к хлебопекарной промышленности и может быть использовано для обеспечения продовольственной и нутритивной безопасности людей с нарушениями, связанными с употреблением глютена.Композиция для получения безглютенового хлеба с добавлением мякоти из шпината, согласно изобретению, содержит муку сориза, кукурузный крахмал, сахар, поваренную соль, ксантановую камедь, муку из семян Psyllium, разрыхлитель, сухие дрожжи, сметану, мякоть из шпината и воду, при этом способ получения хлеба включает раздельное дозирование и смешивание сухих и жидких ингредиентов, их последующее соединение, замес и порционирование теста, после чего следует выдержка, брожение и выпечка.
