Abstract
Invenţia se referă la industria alimentară, în particular la produsele de cofetărie, şi anume la un procedeu de obţinere a bomboanelor glazurate pe bază de fructe uscate.Procedeul, conform invenţiei, include inspectarea şi spălarea prunelor uscate şi/sau a stafidelor cu apă rece, blanşarea acestora cu abur timp de 5...10 min, fierberea prunelor timp de 10-15 min în sirop obţinut din apă şi zahăr luate în raport de 1:4 respectiv, uscarea prunelor şi/sau a stafidelor la temperatura de 40-60°C până la umiditatea reziduală de 20-25%, mărunţirea acestora până la dimensiunile de 0,2-0,5 cm, separarea şrotului de nucă de impurităţi feromagnetice şi tratarea termică a acestuia la temperatura de 60-65ºC, timp de 30-35 min, până la umiditatea de 5-6%, cernerea prafului de cacao şi a zahărului pudră, amestecarea prunelor şi/sau a stafidelor cu şrotul de nucă, praful de cacao, zahărul pudră, acid ascorbic şi, opţional, aromă de migdale, modelarea corpului bomboanelor, acoperirea cu glazură de ciocolată cu temperatura de 29-32ºC şi răcirea la temperatura de 4-6ºC, timp de 5-7 min, totodată componentele sunt luate în următorul raport, în % mas.: prune uscate fără sâmburi0-50stafide50-0şrot de nucă26-30zahăr pudră6-8cacao praf2-4acid ascorbic 0,05-0,1aromă de migdale0-0,1glazura de ciocolatărestul.
