Abstract
Изобретение относится к винодельческой промышленности, а именно к способу гигиенизации технологических поверхностей, предназначенных для контакта с винодельческой продукцией.Способ, согласно изобретению, предусматривает дезинфекцию технологических поверхностей посредством контакта, в течение не менее 5 минут, с количеством в 1…5% винодельческой продукции, предназначенной для контакта с технологическими поверхностями, сульфитированной и подкисленной, состоящим из одной или нескольких частей, после чего ее перемешивают с остаточной частью винодельческой продукции, при этом в качестве винодельческой продукции используется вино, сусло или мезга, количество сульфитированной и подкисленной винодельческой продукции имеет содержание диоксида серы и рН, соответственно, в вине 200…300 мг/дм3 и 2,6…2,8, в сусле 250…350 мг/дм3 и 2,4…2,7 и в мезге 300…400 мг/дм3 и 2,5…2,8.
