Abstract
Изобретение относится к винодельческой промышленности, а именно к способу гигиенизации емкостей, коммуникаций и винодельческой технологической аппаратуры.Способ, согласно изобретению, предусматривает промывание и дезинфекцию емкостей, коммуникаций и винодельческой технологической аппаратуры сульфитированным виноматериалом с концентрацией сернистой кислоты не менее 200 мг/дм3 и подкисленным до значения рН не более 2,8, при этом сульфитированный-подкисленный виноматериал, опционально, нагревается до температуры не более 55°С.
