Abstract
본 발명은 분말 응집체 형태에서 ⑴ 미분된 셀룰로즈 성분 및 ⑵ 하나 이상의 계면활성제를 포함하는 계면활성제 성분의 안전 효과량의 혼합물을 포함하는 식용 지질을 위한 중점제/안전화제/겔화제 및 식용 지질을 안정화시키기 위한 상기 제제의 용도, 및 상기 제제의 제조 방법 모두에 관한 것이다. 본 발명은 또한 종래에 LDL을 증가시키고 HDL을 감소시키는 목적하지 않은 효과를 갖는 지방과 같은 안정화제를 사용해야 얻을 수 있었던 점도 및 결실성 특성을 갖는 생성 안정화 지질에 관한 것이다.

본 내용은 요부공개 건이므로 전문내용을 수록하지 않았음
제1도는 고체 함량의 함수로서, 액체 오일중에 85 : 15의 비율로 존재하는 동시가공시킨 미분된 미정질 셀룰로즈(MCC) 및 소르비탄 모노스테아레이트(SMS)의 점도의 관계를 나타내는 그래프이다,
제2도는 고체 함량의 함수로서, 다양한 식물성 옹일중에 분산되어 85 : 15의 비율로 존재하는 동시가공시킨 MCC 및 SMS의 점도의 관계를 나타내는 그래프이다,
제3도는 본 발명에 따라 비율로 변화시키면서 얻은 MCC/SMS 조성물의 점도와 적용된 전단하의 점도를 나타낸 그래프이다.
Claims (14)
- ⑴ 미분된 셀룰로즈 성분 및 ⑵ 하나 이상의 계면활성제를 포함하는 계면활성제 성분을 갖는 분말 응집체를 특징으로 하는 식용 지질 제제.
- 제1항에 있어서, 미분된 셀룰로즈 성분 90 내지 50중량% 및 계면활성제 성분 10 내재 50중량%를 특징으로 하는 제제.
- 제2항에 있어서, 미분된 셀룰로즈 성분 85 내지 60중량%를 특징으로 하는 제제.
- 제2항에 있어서, 계면활성제 성분 15 내지 40중량%를 특징으로 하는 제제.
- 제2항에 있어서, 미분된 셀룰로즈 성분이 0.1 내지 1.0μ의 평균입자크기를 갖는 미정질 셀룰로즈 입자를 포함하고; 계면활성제 성분이 상기 미분된 셀룰로즈 성분의 표면상에서 흡수되는 제제.
- 제2항에 있어서, 미분된 셀룰로즈 성분이 셀룰로즈 생성물의 총 중량을 기준으로 물 1 내지 7중량%를 포함하는 것을 특징으로 하는 제제.
- 제1항에 있어서, 계면활성제 성분이 모노글리세라이드, 아세틸화 모노글리세라이드, 에톡시화 모노글리세라이드, 소르비탄 에스테르, 모노스테아레이트, 모노-또는 디글리세라이드의 디아세틸 타르타르산 에스테르, 폴리소르베이트 및 나트륨 스테아로일 락틸레이트로 구성되는 그룹중에서 선택된 하나 이상의 계면활성제를 포함하는 것을 특징으로 하는 제제.
- 제7항에 있어서, 계면활성제가 소르비탄 모노스테아레이트를 포함하는 것을 특징으로 하는 제제.
- ⒜ 겔화제 및 식용 지질의 총 중량을 기준으로, 상기 지질을 제1항의 제제 5 내지 25중량%과 혼합하여 혼합물을 형성시키고, ⒝ 응집체를 전단에 의해 분산시키므로써, 상기 지질을 안정화, 중점화 또는 겔화시키는 것을 특징으로 하는 상기 식용 지질의 개질 방법.
- 제9항에 있어서, 단계 ⒜에서 제제 10 내지 15중량%를 혼하시키는 것을 특징으로 하는 방법.
- 제9항에 있어서, 단계 ⒝를 일회 이상 반복하는 것을 특징으로 하는 방법.
- 제10항에 있어서, 단계 ⒝를 1 내지 3회 반복하는 것을 특징으로 하는 방법.
- 제9항의 방법에 따라 제조한 안정화된 식용 지질 조정물.
- 셀룰로즈 입자 및 계면활성제를 혼합하고, 혼합물을 균일해질 때까지 혼합하고, 혼합물을 건조시키는 것을 특징으로 하는, 제1항의 응집체를 제조하기 위한 방법.※ 참고사항 : 최초출원 내용에 의하여 공개하는 것임.
