Abstract

본 발명은 종래의 제빵 공정의 시간적 단축화를 도모하는 방법을 제공한다.
빵 등의 제빵 제품의 제조법에 있어서, 성형된 원료를 실질적인 배로 공정에 제공하지 않으며 감압하에 팽창시킨 후, 계속해서 가열처리를 실시하여 소성하거나 감압하에서 팽창시키면서 가열해서 소성하는 것을 특징으로 하여 구성되어 있다.

Claims (4)

  1. 베이커리 제품의 제조법에 있어서, 성형된 원료를 실질적인 배로 공정에 제공하지 않고 감압하에서 팽창시킨 후, 계속해서 가열처리하여 소성하거나, 또는 감압하에 팽창시키면서 가열해서 소성함을 특징으로 하는 베이커리 제품의 제조법.
  2. 제1항에 있어서, 압력 150mmHg 내지 650mmHg의 감압하에 행하고, 소성 종료시까지는 점차적으로 대기압으로 되도록 압력 조절을 수행하는 것을 특징으로 하는 제조법.
  3. 제1항에 있어서, 열전도성, 복사효율, 밀폐성이 높고 감압가능한 소성용 용기내에서 성형 원료의 팽창 및 가열 처리와 같은 소성을 수행하는 것을 특징으로 하는 제조법.
  4. 제1항에 있어서, 성형 원료가 성형 냉동 원료를 해동시킨 것임을 특징으로 하는 제조법.
