Abstract
본 발명은 종래의 제빵 공정의 시간적 단축화를 도모하는 방법을 제공한다.
빵 등의 제빵 제품의 제조법에 있어서, 성형된 원료를 실질적인 배로 공정에 제공하지 않으며 감압하에 팽창시킨 후, 계속해서 가열처리를 실시하여 소성하거나 감압하에서 팽창시키면서 가열해서 소성하는 것을 특징으로 하여 구성되어 있다.

Claims (4)
- 베이커리 제품의 제조법에 있어서, 성형된 원료를 실질적인 배로 공정에 제공하지 않고 감압하에서 팽창시킨 후, 계속해서 가열처리하여 소성하거나, 또는 감압하에 팽창시키면서 가열해서 소성함을 특징으로 하는 베이커리 제품의 제조법.
- 제1항에 있어서, 압력 150mmHg 내지 650mmHg의 감압하에 행하고, 소성 종료시까지는 점차적으로 대기압으로 되도록 압력 조절을 수행하는 것을 특징으로 하는 제조법.
- 제1항에 있어서, 열전도성, 복사효율, 밀폐성이 높고 감압가능한 소성용 용기내에서 성형 원료의 팽창 및 가열 처리와 같은 소성을 수행하는 것을 특징으로 하는 제조법.
- 제1항에 있어서, 성형 원료가 성형 냉동 원료를 해동시킨 것임을 특징으로 하는 제조법.※ 참고사항 : 최초출원 내용에 의하여 공개하는 것임.
