Abstract

PURPOSE:To produce a dough for food of rice confectionery or snacks having excellent texture, by kneading and pressurizing a raw material consisting essentially of starch while adding 10-25wt.% water thereto in an extruder and carrying out extrusion molding while cooling the raw material. CONSTITUTION:A raw material consisting essentially of starch is kneaded and pressurized while adding 10-25wt.% water thereto in a twin-screw type extruder and then extrusion molded while being cooled so as to prevent expansion. The resultant material is directly used as a cooking dough or coated with a fat and oil or glazing agent on the surface. The obtained dough is subsequently expanded in an apparatus, such as microwave oven, capable of irradiating microwaves. Thereby the aimed dough for food of rice confectioneries or snacks having excellent texture when made into a food, such as Japanese cracker, can be economically produced in a short time.
