Abstract

본 발명은 밀폐된 용기내에서 산소와 수소를 공급하여 전기 점화시킴으로써 3000-3500℃에서 3초간 초고온 순간가열방식에 의하여 그 구조식이 변경된(Conformational change) 신규한 식용유와 그 제조방법을 제공한다.
이 구조 불명의 본 발명 식용유는 친수성이 증대되고, 비중, 용해도, 유화도, 투명도 및 비점이 증가된 반면 융점, 산도, 경도 및 점도가 저하되어 있다.
이같은 구조미상의 유지분자는 그 구조의 특이성 때문에 생체내에서 면역구조에 영향을 미치는 것으로 판단되고 있으며 또 그 구조의 특이성 때문에 종래의 버터, 마가린, 쇼트닝 등 고형제품을 액상제품화할 수 있는 특징을 가진다.

Claims (4)

  1. 압착 또는 초음파 추출한 식용유를 밀폐된 용기내에서 등량의 물과 함께 혼합 후 3000-3500℃에서 3초간 초고온 순간가열처리하여 탈수후 분리함을 특징으로 하는 신규한 식용유 제조방법.
  2. 제1항의 방법에 의하여 제조된 식용유가 통상의 식용유에 비하여 침수성, 비중, 용해도, 유화도, 투명도, 및 비점이 증가된 반면 융점(MP), 산도(pH), 경도 및 점도는 저하된 이화학적 성질을 갖는 구조미상의 신규한 식용유.
  3. 제1항 또는 제2항에 있어서, 상기 식용유가 기존의 유지제품원료에 첨가된 액상(Liguid forml)제품.
  4. 제1항에 있어서, 상기 탈수분리후 신규한 식용유를 얻은 다음 나머지 침전물은 사료로 사용하는 방법.
